Kale Chutney or Spread (Rich in Antioxidants)


Nutritious Kale chutney (rich in antioxidants):
Ingredients:
1 medium size Kale bunch
5 garlic cloves
1tsp Cumin seeds
1tsp Coriander powder
5 Red chillies (spice may vary)
1 1/2 Tbsp Canola Oil
2 tsp Tamarind puree (allergic to tamarind substitute to Black Kokum (Dry Jungle Plum) Cranberries, or lemon)
Salt to taste

For seasoning (Tadka)
1 tsp Canola Oil
1/2 tsp Mustard Seeds
1/2 tsp Channa dhal (Bengal gram dhal)
1/2 tsp Cumin seed
1/2 tsp Urad dhal (Black gram Dhal)
1 Crushed Garlic Clove
1 Dried red chilly
3 Sprigs of Curry leaves

Directions:
1.

Heat oil in a pan add cumin, garlic cloves, Thai chillies let them splutter ensure not to burn them.
2. Add the chopped kale saute add 1/4th cup of water to avoid burning or cover with lid for 10minutes.
3. Blend the ingredients along with salt and tamarind puree to a thick paste using a small amount of water for desired consistency.
4. Transfer it to a serving bowl.
5. Heat oil in a seasoning pan add crushed garlic clove, mustard seeds, cumin seeds, red chilly let it splutter add channa dal, urad dhal, curry leaves and add the seasoning to the grind chutney.
6. Enjoy with Brown rice, Quinoa, bread spread, and as a dip.
