Kale - A Nutritional Powerhouse.


What is Kale?
Kale or Borecole is a form of cabbage. It is a Nutritional Powerhouse.
1. Kale is rich in the eye-health promoting lutein and zeaxanthin compounds.
2. It is rich in Vitamin K (necessary for normal blood clotting) reduces the overall risk of developing or dying from cancer, according to a study in the American Journal of Clinical Nutrition.
3. It is rich in anti-oxidants.
4. It is low in Saturated Fat, and very low in Cholesterol.
5. "It is also a good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin B6, Calcium, Potassium, Copper and Manganese".

How to prepare Kale:
1. Chop kale and mix it in Roti dough.
2. Slice Kale into bite size pieces toss it with salt, olive oil and pepper and bake it for 10-15min at 350 degrees in the oven.
3. Make dhal/pappu with finely chopped Kale.
4. Make mouth watering Kale pacchadi (chutney or relish) tastes exactly like Gongura pacchadi (Pitwaa in Hindi)
